My husband and I do adventure and orienteering races. Trying to eat a paleo diet is sometimes hard when you are doing endurance activities. I had some leftover protein powder and with some on-line searching I found a couple of recipes for snack bites using the powder. I brought them as a treat at Christmas time and my neices and nephews loved them! The best part is you can easily adapt the recipe depending on what you have on hand.
Ingredients
1/2 cup - oatmeal
1/2 cup -almond butter (or peanut butter)
1/4 cup -honey
1 cup - coconut flakes
1/2 cup - ground flaxseed (or regular)
1/4 cup - chia seed
2 tlbs. - protein powder
Additional seeds or nuts as desired.
Mix all ingredients in a bowl. Form small balls and enjoy (if the mixture does not form balls but is crumbly, add more nut butter.) Store in sealed container.
