Paleo Banana Breakfas Cookies

I had bananas that had become to ripe for me to eat so I searched for possible recipes to try. I had found breakfast cookies before starting the paleo lifestyle and was intrigued by the idea of a breakfast cookie I could make ahead of time. It would be a quick, easy breakfast that I could ask grab and eat on the go. This recipe was adapted from The Preppy Paleo at http://www.preppypaleo.com/2013/03/paleo-banana-breakfast-cookies.html


Paleo Banana Breakfast Cookies

2 ripe bananas, mashed
1/2 cup raw almond butter or other nut butter
1 egg
1/2 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. All-Spice
1-2 cups total mix-ins (coconut, nuts, dates, dried fruit, cocoa nibs, chocolate chips, etc)

Preheat oven to 350. Combine all ingredients until well blended. Drop by tbs. onto a greased or Silpat-lined baking sheets. Bake for 12 minutes or until golden brown on the bottom.

These will spread a bit more than traditional cookies, so leave sufficient space between your cookies.
